Marzipan, Persipan

Marzipan is a product with long tradition.  A product of today and a product of the future. The only ingredients are almonds, sugar and water. No additives. There’s nothing more natural. Marzipan raw material is a mass produced from refined almonds. It contains up to 17% moisture and 35% sugar, so a maximum of 10% of the weight of the raw mass is inverted sugar.

Since almond is a very expensive kind of raw material, and its price depends on yield and demand, there  was a need for alternative raw materials. It was supposed to have similar qualities, but to be inexpensive, and such raw materials were found in apricot kernels. When apricot kernels were used instead of almonds, they received mass, with a slightly different taste, which could be treated in the same way as marzipan. Thus the Persipan appeared.
