Candied fruits are fruits, berries, vegetables or their particles cooked in sugar or sugar syrup with some types of food acids, then dried, frosted or coated. Consuming properties of candied fruits are determined by their pleasant taste, good assimilation , storage stability, multipurpose usage both for direct consumer needs and for confectionary . The basis of candied fruits are formed by carbons, organic acids and mineral substances.
